Sugar substitutes, honey versus stevia

Stevia is a herb containing a concentrated sweetener, but at the moment, no one here appears to have too much information of the composition of the sweetener. It is green in color and can be purchased in dried leaf, powdered, or liquid form. If used for baking, recipes can be found on the internet. It has a strong but not unpleasant aftertaste.

Honey is derived from the nectar of flowers and, unlike refined sugar, consists of various sugars which enter the blood stream at different times. It therefore has less effect on blood sugar levels than refined sugar.

It does not have an aftertaste and does not change the color of food. It is used in baking by substituting 1cup of honey for 2 cups of sugar. Watch for possible tendency to burn the cake. Cover with foil it cake is dark enough before the baking time is done.
