Should I dry or freeze herbs to preserve them?

When drying foods, remember that freezing or air drying herbs depends on the herb. Air drying is the easiest and least expensive and works well with herbs that have low moisture content such as: Bay, Marjoram, Oregano, Rosemary, Thyme and Dill. Herbs with higher moisture content do best with freezing. High moisture herbs are Basil, Tarragon, Mint, Chives. Never use an oven to dehydrate your herbs; it will diminish the oils which provide the flavor
