Cut in half, then scoop out the flesh and seeds. Although the seeds are edible, remove by straining pulp through a sieve. You can also put the flesh and the seeds into a blender, and briefly pulse until the seeds loosen, then strain through a cheese cloth. Chill and drizzle with lemon juice, or stir with whipped cream. Make a delicious topping for fruit salads by cooking with sugar and chilling. The pulp can also be added to fruit smoothies.
